Stitching matters first as honesty of appearance. A leather shoe with a visible stitch line looks assembled: upper, thread, sole. A fully cemented fashion shoe can look smooth and sealed, which some people prefer, but it reads differently next to a brogue or derby with thread on show.
Second, stitching is a map. A cobbler can see where the upper meets the bottom. Whether that pair can be resoled still depends on the real construction — we will not promise a welt type from a photograph alone.
